Canned soup doesn’t come close to this mouthwatering bowl of homemade magic. The key is focusing on a flavorful variety of fresh, whole ingredients. Then you’ll just need to grab a bowl — a great big bowl, that is.

INGREDIENTS

SERVES 1

  • 6 oz Organic Extra Lean Ground Turkey Breast
  • 2 garlic clove
  • 1 3/4 cups Low Sodium Organic Chicken Broth
  • 1 Tomato, Large
  • 2/3 cup Organic Frozen Corn
  • 1/2 Jalapeno Pepper
  • 1/4 tsp sea salt
  • 1 tbsp 100% Lime Juice
  • 1/2 whole Avocado
  • 2 tbsp fresh cilantro

DIRECTIONS

1 Add the ground turkey, garlic, and 1/4 cup of the broth to a medium saucepan over medium-high heat and cook while stirring until the turkey is crumbled and cooked through, about 3 minutes.
2 Add the remaining 1 1/2 cups of broth, the tomatoes (with seeds removed), corn, jalapeno, and salt, and bring to a boil over high heat. Reduce heat to medium-low; simmer uncovered until flavors are concentrated, about 12 minutes. Stir in the lime juice.
3 Ladle into a large bowl and top with the avocado and cilantro.
