Instead of hummus, you’ll be dipping whole-grain pita chips into a different Middle Eastern-inspired delight: scrambled eggs whirled with extra-virgin olive oil, lemon juice, scallions and grape tomatoes.
INGREDIENTS

1 tsp Extra Virgin Olive Oil

3/4 tsp LEMON Juice, Fresh Squeezed

2 Free Range Large Eggs

1/8 tsp Sea Salt

1 stalk scallion(s)

1/2 cup Grape Tomatoes

1 oz Whole Grain Pita Chips - Sea Salt
DIRECTIONS

Whisk together the oil, lemon juice, eggs, and salt in a 12-oz. microwave-safe coffee mug. Stir in the scallion and tomatoes.

Microwave on high for 45 seconds; stir with a fork. Then microwave until eggs are nearly set, 30 seconds longer; stir with a fork to scramble.

Serve with the pita chips.
