Middle Eastern Grass-Fed Steak Kebabs

Looking for a protein-packed or carb-conscious dinner? Here you go! These Middle Eastern beef kebabs are absolutely succulent—especially when each bite is savored with Greek yogurt. Be sure to first select the eco-friendliest beef you can, such as certified organic and grass-fed beef.

INGREDIENTS

SERVES 1

  • 2 tsp Lemon Juice
  • 1 tbsp extra-virgin olive oil
  • 1/4 tsp Ground Cinnamon
  • 1/4 tsp sea salt
  • 6 oz Lean Flank Steak - Raw
  • 1 stalk scallion(s)
  • 1/2 large Green Bell Pepper
  • 8 cherry tomato(s)
  • 1/2 cup Organic Greek Plain Nonfat Yogurt
  • 2 tbsp fresh mint leaves

DIRECTIONS

1 Preheat a grill or grill pan on medium-high heat.
2 In a medium bowl, whisk together the lemon juice, oil, cinnamon and salt.
3 Cut the beef and bell pepper into 8 cubes. Add the beef cubes and scallion to the bowl and toss to fully coat.
4 Insert the beef, bell pepper, and tomatoes onto four (8-inch) skewers. Grill the beef-vegetable skewers until the meat is at least medium-rare, about 5 to 7 minutes.
5 Serve atop the yogurt and sprinkle with the mint.
