Middle-Eastern Spiced Brisket

It?s simple to throw together, but it does take a while to cook, so it?s a good one to make on a Sunday afternoon to serve later during a busy week.

INGREDIENTS

SERVES 6

  • 2 1/2 lb Beef Brisket Lean
  • 1 tsp Allspice, Ground
  • 1 tsp Cinnamon, Ground
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Salt
  • 1 tsp extra-virgin olive oil
  • 1 onion
  • 1/4 cup water
  • 1/4 cup Tomatoe Sauce
  • 2 cups Chopped Tomatoes
  • 10 Kalamata Olives Pitted
  • 10 fresh parsley sprig

DIRECTIONS

1 Start by rubbing brisket with ground allspice, ground cinnamon, ground cumin, ground coriander and kosher salt. Set aside at room temperature for 1 hour.
2 Preheat oven to 325 degrees.
3 Heat oil in a large oven-safe Dutch oven over medium-high heat, and brown brisket on all sides.
4 Add onion, water and tomato sauce, cover tightly and braise in oven 2 hours.
5 Remove, add chopped tomatoes and kalamata olives.
6 Braise 1 hour longer. Remove, cool to room temperature, then refrigerate up to 3 days. Reheat in a 200-degree oven for 45 minutes.
7 Top with a generous sprinkling of chopped fresh flat-leaf parsley?it not only adds fresh flavor, but also adds a dose of calcium and vitamin C.
