Mushroom Toast with Fried Egg

Forget avocado toast for just one second, says Sarah Gim of @thedelicious. Her toast recipe features mushrooms, which provide vitamins B and D, selenium and antioxidants, as well as a protein-rich fried egg. Throw ricotta and chopped fresh herbs in the mix, and you've got a toast fit for a queen (or king).



  • 2 inch slice Sourdough Whole Grain Bread
  • 4 tbsp Ricotta Almond Milk
  • 8 oz Mixed Mushrooms
  • 1 tbsp Cooking Oil
  • 2 large whole egg
  • 1/2 tbsp Thyme, fresh
  • 5 sprigs Parsley, fresh


1 Toast or grill bread (you can use gluten-free bread if you're so inclined).
2 Spread each slice of toast with 2 tablespoons of almond milk ricotta (regular ricotta if you eat dairy). Sprinkle the ricotta with a pinch of salt. Set aside.
3 Heat neutral cooking oil over medium flame in a frying pan large enough to hold the sliced mushrooms. When the oil is hot, add the sliced mushrooms and a pinch of salt and saute, stirring continuously with a wooden spoon. If the mushrooms begin to stick to the pan, add a little more oil to the pan. Season with additional salt if necessary. Spoon mushrooms over ricotta on toast.
4 Wipe out the frying pan with a paper towel. Heat 1 tablespoon of oil over medium flame in the same pan, and fry eggs to desired doneness. Slip fried eggs out of the pan and onto mushrooms on each toast. Season eggs with salt and pepper, and garnish with chopped fresh herbs (and crushed red pepper if using).
5 For an extra kick, add crushed red pepper on top.
