Mushroom and Bell Pepper Beef Kebabs

These grilled kebabs feature chuck roast, mushrooms, zucchini and bell peppers. They take just 11 minutes to make, but taste incredibly delicious. If you’re using wood skewers, be sure to soak them in water for half an hour. This prevents the skewers from catching fire.

INGREDIENTS

SERVES 4

  • 1 lb Pot Roast, Beef, Au Jus
  • 1 medium White Onion
  • 1 medium red bell pepper
  • 12 medium Button Mushrooms
  • 1 medium green bell pepper
  • 1 medium zucchini
  • 1 Whole Yellow Bell Pepper
  • 1/4 tsp Kosher Salt
  • 1/4 tsp Black Pepper

DIRECTIONS

1 Fire up your grill.
2 Season beef cubes with salt and pepper.
3 Pointing the sharp end up, hold the skewer vertically with one end on a cutting board. Alternate the onion layers, beef, peppers, mushrooms, and zucchini on skewers until you run out of ingredients.
4 Spray with olive oil, season with salt and pepper.
5 Place kebabs on the grill over medium-high heat and cook 4 minutes, flip and cook another 4 minutes.
6 Rest 3 minutes, test doneness and seasoning, then serve.
7 Notes:
8 If using wood skewers, soak them for at least half an hour before starting on the recipe.
