Nacho Fries

I’ve swapped corn chips for purple sweet potatoes and sour cream for Greek yogurt, so the end result is healthier than your normal nachos. I didn’t add beans because the sweet potatoes are so high in carbs, but you can throw those on too if you want! Just add them along with the cheese and hot sauce before baking.

INGREDIENTS

SERVES 4

  • 2 medium cooked sweet potato
  • 1/2 cup Sharp Cheddar Cheese, Finely Shredded
  • 1/2 cup avocado
  • 1/4 cup Plain Greek Yogurt
  • 3 tbsp Salsa
  • 2 tbsp Hot Sauce

DIRECTIONS

1 Make sure your sweet potatoes are sliced 1/4" thick and roasted for 25-35 minutes until crispy before beginning this recipe
2 Preheat oven to 375 degrees F
3 Place fries closely together, overlapping slightly, on a parchment lined baking sheet
4 Add cheese and hot sauce to fries
5 Bake for 10 minutes, until cheese is melted and slightly golden
6 Remove from oven and top with salsa, avocado, and Greek yogurt
