No-Cook Gluten-and Dairy-Free Vegan Paleo Pumpkin Pie Pudding

Can vegans be paleo? Yes, indeed. With this recipe you can be vegan or paleo, and you can have your pumpkin pie without crust and without cooking! Sometimes I just want to eat tons of the pumpkin filling on its own. This recipe is so easy to make, and it's gluten-free and dairy-free.

INGREDIENTS

SERVES 4

  • 1 3/4 cups Farmer's Market Organic Pumpkin
  • 3 tbsp Coconut Milk
  • 2 tbsp Organic Raw Almond Butter (creamy)
  • 4 tbsp Maple Syrup Organic
  • 1 tsp Organic Vanilla Extract
  • 2 tsp Cinnamon
  • 1/2 tsp Nutmeg, Ground
  • 1/2 tsp Ginger, Ground
  • 1/4 tsp Cloves, Ground

DIRECTIONS

1 Blend all ingredients in a bowl until smooth OR add all ingredients to a food processor and purée to desired smoothness.
2 Drizzle shredded raw coconut and/or slivered almonds on top.
3 That's it! Enjoy!
