No-Cook Mexican Layer Tacos

These dipped tacos are the perfect crispy, no-cook dish. Drizzle on the yogurt mixture with lime juice, ground coriander and cumin for some creaminess with the crunch!

INGREDIENTS

SERVES 6

  • 3/4 cup Vegetarian Refried Beans
  • 1 tbsp Salsa, Verde
  • 3/4 cup 2% M.F Greek Yogurt, Plain
  • 1 1/2 tsp lime juice
  • 1/2 tsp Ground Coriander
  • 1/2 tsp Ground Cumin
  • 3/4 cup Burrito, Guacamole
  • 3/4 cup low-fat Monterrey cheese
  • 2 medium scallions
  • 1/2 cup Grape Tomato
  • 6 Taco Shells

DIRECTIONS

1 In a small bowl, stir together the refried beans and salsa verde (tomatillo salsa). Set aside.
2 In a separate small bowl, stir together the yogurt, lime juice, ground coriander, and cumin. Set aside. (Hint: The thicker the yogurt, the better.)
3 Fill each taco shell with the bean mixture, yogurt mixture, guacamole, cheese, scallions, and tomatoes, and serve immediately. (Hint: For a unique taste twist, try sliced grapes in place of tomatoes.)
