Nopales (cactus paddles) are a staple ingredient in Mexican cuisine. Nopales are the paddles of the prickly pear cactus and are rich in vitamins and minerals, and they are also beneficial is reducing blood sugar levels.

INGREDIENTS

SERVES 1

  • 1 cup Nopales, raw
  • 1 medium Roma Tomatoes
  • 3/5 oz Raw Red Onions
  • 34 g Serrano Peppers, Chiles Serranos
  • 1/4 cup fresh cilantro
  • 4 oz Queso Fresco

DIRECTIONS

1 Season nopales lightly with coarse salt.
2 Cook nopales in a medium skillet over medium-high heat until they start to release their own juices. Cover and let simmer, stirring occasionally, until nopales are cooked through and all of the liquid has evaporated.
3 Remove from heat; let cool completely.
4 In a medium bowl, gently toss together the cooled nopales, tomato, onion, serrano chiles, and cilantro; season lightly with salt to taste. Cover with plastic wrap; refrigerate for at least 30 minutes or until ready to serve.
5 Top with crumbled queso fresco just before serving.
