This low-carb sushi roll is nothing more than creamy avocado slices wrapped in crunchy seaweed (nori). It's perfect quick fuel, and considering more than 50 percent of avocado's fat content comes from monounsaturated fats, it's a snack you can feel good about.

INGREDIENTS

SERVES 1

  • 1 medium Hass Avocado (1/2)
  • 2 pieces Nori

DIRECTIONS

1 Cut the avocado half lengthwise into approximately 6 slices.
2 Cut the nori into thin strips, then wrap a strip around each avocado slice.
3 NOTE: If you want to add brown sushi rice to this and make full-on avocado nigiri sushi, don't let us stop you!
