Nut Lover’s Protein Balls With Sea Salt

This sweet, salty, nutty recipe features both peanut butter and roasted pistachios. In addition to providing plant-based protein, pistachios and peanuts provide notable amounts of phytosterols, which play a role in reducing the risk of cardiovascular disease.

INGREDIENTS

SERVES 12

  • 1/2 cup Creamy Peanut Butter
  • 3 tbsp Coconut Nectar
  • 1 tbsp Virgin Coconut Oil
  • 1 cup Old Fashioned Rolled Oats
  • 3 tbsp Chia Seeds
  • 1 1/4 oz salted dry-roasted pistachios
  • 3 tbsp Bittersweet Chocolate, Organic, 65% Cacao
  • 1/8 tsp Sea Salt

DIRECTIONS

1 In a large bowl, stir together the peanut butter, coconut nectar (or honey), and liquefied coconut oil until evenly combined. Add the oats, chia seeds, pistachios, finely chopped chocolate, and sea salt and stir until evenly combined.
2 With clean hands, form into 12 balls, about 2 tablespoons each.
3 Place in a sealed container. Store in the refrigerator for 1 week or freezer for 1 month.
