Oatmeal Raisin Cookie Dessert Hummus Balls

Who doesn’t love an energy bite? Oatmeal raisin cookie dessert hummus balls keep all of the energy in a bite-sized morsel.

INGREDIENTS

SERVES 4

  • 15 oz Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, drained, rinsed in tap water
  • 1/2 cup Rolled Oats
  • 1 tsp Vanilla extract
  • 3 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp Iodized Salt
  • 2 tbsp 2% reduced-fat milk
  • 1/4 cup raisins

DIRECTIONS

1 Drain and rinse chickpeas. Remove skins by gently squeezing and separating the skin from the bean.
2 Add chickpeas, 1/4 cup oats, vanilla, brown sugar, cinnamon and salt to the food processor. Blend until smooth.
3 While the food processor is running, add in two tablespoons milk.
4 Remove from food processor and stir in remaining 1/4 cup oats and raisins
5 Form into one-inch balls.
6 Roll in extra oats if desired.
