If you cannot decide if you want the pancakes or scrambled eggs, make Oaty-Eggs. You can either use low-fat milk or nonfat Greek yogurt as the binder in this recipe. Protein plus fiber will give you a really satisfying start to your day, lunch or dinner!

INGREDIENTS

SERVES 1

  • 2 egg
  • 1/4 cup Rolled Oats
  • 1/8 cup low-fat milk

DIRECTIONS

1 Place all ingredients into blender and pulse until completely mixed. The oats soak up the liquid ingredients and you are left with a light blintz-like pancake. You can make the pancake sweet with a little agave and cinnamon, or savory with hot sauce and veggies.
2 Cook the mixture in a lightly greased pan over a medium high heat.
3 Serve immediately.
4 Enjoy!
