Paleo Charred Lemon Skirt Steak Salad

Skirt steak is a less expensive cut and appropriate for an everyday meal; the marinade helps soften this otherwise-tough piece of meat. The avocado oil allows the lemony flavor to shine through.



  • 1 lemon
  • 4 tbsp Avocado Oil
  • 1/4 cup Lemon Juice
  • 1 clove Garlic!
  • 1/4 tsp Salt
  • 1 pinch Black Pepper, Ground
  • 2 cups Skirt Steak
  • 6 leaves Romain Lettuce
  • 1/2 cup Sliced Carrots
  • 1/2 cup Cucumbers
  • 1/4 cup Radicchio


1 Cook lemon slices in a pan over high heat until very browned, about five minutes. Set two aside for garnish.
2 Add cooked lemon to blender with remaining dressing ingredients, and blend on medium until lemon slices have mostly disappeared into dressing.
3 Use 1/4 of marinade to cover skirt steaks; allow to sit for 30 minutes, until they are at room temperature.
4 Marinade:
  large lemon, sliced into 10 rounds, including peel, seeds removed.
  4 tablespoons avocado oil
  Juice of 1 lemon (1/4 c)
  1 clove garlic
  1/4 tsp salt
  Ground pepper to taste
5 Cook steak over high heat in a pan for 5 minutes for medium rare (recommended), or 8-10 minutes for medium to well done. Allow to rest for five minutes, then slice.
6 Assemble all salad ingredients and toss with remaining dressing. Garnish with reserved charred lemon slices.
