Paleo Thanksgiving Stuffing

This paleo Thanksgiving stuffing is courtesy The Food Lover's Kitchen.

INGREDIENTS

SERVES 8

  • 1 lb Ground Pork
  • 1 onion
  • 1 large Green Bell Pepper
  • 2 cups Button Mushrooms
  • 1 cup Celery
  • 5 cloves Garlic Clove
  • 2 tbsp Rosemary, fresh
  • 2 tbsp Ground Thyme
  • 2 tbsp Sage, Fresh
  • 1 pinch Salt
  • 1 pinch Pepper*
  • 2 tsp Fennel Seed
  • 2 tsp Anise Seed
  • 2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp Organic Coconut Oil, Refined

DIRECTIONS

1 **Note: Adjust stuffing measurements accordingly depending on amount of people being served. This stuffing filled a 16 lb turkey, as well as a 5 qt braising pan.
2 Process For Stuffing:
3 Heat coconut oil in a large skillet on medium heat.
4 Place bell pepper, mushrooms, and celery into skillet and saute.
5 In a large mixing bowl, combine ground pork, onion, garlic, rosemary, thyme, sage, fennel seeds, anise, paprika, cayenne, salt, and pepper.
6 Add ground pork mixture to skillet, and cook until pork is browned slightly.
7 Remove from heat, and discard any liquid in the pan.
