This Paleo vegan bowl has the anti-inflammatory benefits of turmeric and the crunch of low-calorie jicama, which has plenty of healthy fiber.

INGREDIENTS

SERVES 2

  • 3 cups raw kale
  • 2 cups Jicama
  • 1 cup mango
  • 1 medium Mushrooms, enoki, raw
  • 1 tbsp Organic Vegan Mayo
  • 1/2 tbsp Chili Paste
  • 1/2 tsp Turmeric

DIRECTIONS

1 In a mixing bowl, combine chile paste, mayonnaise, and turmeric
2 Add jicama and toss to coat
3 Place kale in a serving bowl and top with jicama mix and sunomono; tuck enochi mushrooms into jicama.
4 Notes:
  You'll need about 2 tbsp of enochi mushrooms.
  If possible, use grated fresh turmeric root
