Whole-grain penne pasta turns this caprese salad into a complete meal. Add arugula for a nice dose of calcium and vitamins A and C. Enjoy the salad for lunch, or serve it as a healthy appetizer.
INGREDIENTS
SERVES 4

2 cups Whole Grain Penne

2 cups Arugula, Organics

2 Medium Tomato
-
1/2 cup Mozarella Cheese

10 Fresh Basil Leaves

1/4 cup olive oil

2 tbsp balsamic vinegar

1/4 tsp Salt

1/4 tsp Black Pepper
DIRECTIONS

Boil a pot of water and add the pasta.

Cook the pasta according to package directions (10-12 minutes)

Run cold water over cooked pasta to cool it down.

Toss all of the salad ingredients together, or compose your salad on two plates, with the arugula on the bottom.

Whisk the olive oil, vinegar, salt and pepper together for a dressing, and pour over the salad.
