Pasta Caprese Grain Salad

Whole-grain penne pasta turns this caprese salad into a complete meal. Add arugula for a nice dose of calcium and vitamins A and C. Enjoy the salad for lunch, or serve it as a healthy appetizer.

INGREDIENTS

SERVES 4

  • 2 cups Whole Grain Penne
  • 2 cups Arugula, Organics
  • 2 Medium Tomato
  • 1/2 cup Mozarella Cheese
  • 10 Fresh Basil Leaves
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

DIRECTIONS

1 Boil a pot of water and add the pasta.
2 Cook the pasta according to package directions (10-12 minutes)
3 Run cold water over cooked pasta to cool it down.
4 Toss all of the salad ingredients together, or compose your salad on two plates, with the arugula on the bottom.
5 Whisk the olive oil, vinegar, salt and pepper together for a dressing, and pour over the salad.
