Peach Melba Smoothie

INGREDIENTS

SERVES 2

  • 2 Medium Size Peach, Raw
  • 1/3 cup raspberries
  • 3/4 cup Fat Free Milk
  • 2 tsp Flaxseed Meal
  • 1/4 tsp Pure Vanilla Extract
  • 1/8 tsp Pure Almond Extract

DIRECTIONS

1 Pit and slice the peaches. Do not peel. Place the peach slices in a single layer on a parchment paper–lined tray, cover, and freeze for at least 2 hours or overnight.
2 In a small bowl, mash the fresh (or frozen thawed) raspberries with a fork. Set aside.
3 Add the frozen peach slices, milk, flaxseed meal, and extracts to a blender. Cover and blend on high speed until velvety smooth and only tiny flecks of peach skin are visible.
4 Pour into two chilled glasses and top with the mashed raspberries. Garnish with small fresh mint sprigs, if desired, and serve.
