Peaches and Cream Steel Cut Oatmeal

This do-ahead method allows you to prepare the oats the night before, limiting the hands-on work to just a few minutes in the morning.

INGREDIENTS

SERVES 4

  • 2 cups water
  • 2 cups 1% Milk
  • 1 cup Steel Cut Oats
  • 1 pinch Salt
  • 1 1/2 cups Frozen Peaches

DIRECTIONS

1 Combine 2 cups water and milk in a large saucepan with a tight-fitting lid.
2 Bring to a boil, then stir in 1 cup steel cut oats and a pinch of salt.
3 Cook 1 minute, then place lid on pan and remove from heat. Set aside overnight.
4 To reheat, stir in 1 1/2 cups chopped fresh or frozen peaches and, if needed, a splash of whole milk.
5 TIP: Serve with sliced almonds and drizzled with pure maple syrup or honey to taste.
