Peanut Butter “French Toast” With Simple Blackberry Syrup

Onto a pan-toasted peanut butter sandwich you’ll drizzle warmed fruit spread that becomes syrupy when heated. Just be sure to buy natural peanut butter and fruit spread without added sugars for the best health bet. Recipe + image courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 1

  • 1 1/2 tbsp natural peanut butter
  • 2 whole-grain bread slice(s)
  • 1 1/2 tsp Coconut Milk Beverage Unsweetened
  • 1 1/2 tsp Virgin Coconut Oil, Unrefined
  • 2 tbsp Seedless Fruit Spread, Marion Blackberry

DIRECTIONS

1 Spread the peanut butter (or almond butter) between the bread slices, forming a sandwich. Lightly brush each side of the sandwich with the coconut milk beverage (or almond milk).
2 Heat the coconut oil in a medium cast iron or (PFOA-free) nonstick skillet over medium-high. Add the sandwich and cook on each side until browned and crisp, about 3 minutes per side.
3 Meanwhile, add the fruit spread (jam) to a small saucepan. Place over medium and simmer until just liquefied.
4 Serve the “French toast” whole or sliced on the diagonal. Top with the warm blackberry syrup.
