Persimmon, Pistachio and Turnip Salad with Mustard Greens

This salad, by Chef Seamus Mullen, embodies autumn. It not only features root vegetables, persimmon and kale but adds Manchego cheese crisps and adds tons of savory flavor with sardines whose filling protein turns this salad into a meal.

INGREDIENTS

SERVES 1

  • 1 cup Mustard greens, raw
  • 1 cup raw kale
  • 1 fruit without refuse Persimmons, native, raw
  • 1 medium Turnips, raw
  • 1 oz raw pistachios
  • 5 sprigs Dill weed, fresh
  • 10 sprigs Parsley, fresh
  • 2 tbsp Basil, fresh
  • 1 oz Manchego
  • 2 canned sardines

DIRECTIONS

1 Mix all the ingredients in a large bowl.
2 Place Manchego crisps and sardines on top.
