Pesto Hummus

Short on time? Buy pre-made pesto and stir in two tablespoons into the classic recipe, tasting as needed to adjust the amount of lemon in the recipe or more pesto for a stronger flavor.

INGREDIENTS

SERVES 5

  • 15 oz canned chickpeas
  • 2 tbsp Lemon Juice
  • 2 garlic clove
  • 1/2 cup Basil, Fresh
  • 1/2 cup Pecorino Romano
  • 1/2 cup Pignoli Pine Nuts
  • 2 tbsp Tahini
  • 1 2/5 cups Extra Virgin Olive Oil
  • 1 pinch Salt

DIRECTIONS

1 Lightly toast pine nuts in a dry pan on low to medium heat and set aside.
2 Juice the lemon and have another handy in case you want more.
3 Combine the ingredients in a blender or food processor and blend until smooth.
4 Adjust salt and lemon as needed.
5 Serve with pita chips, vegetables or use as a spread.
