Petite Peach Melba Ricotta Parfait

Layer thinly sliced peach halves into glasses, top each with a scoop of ricotta cheese, and then drizzling on warm raspberry syrup for a martini treat!



  • 1 medium peach
  • 1/3 cup part-skim ricotta cheese
  • 4 tsp Seedless Red Raspberry Fruit Spread


1 Halve the peach and remove the seed. Slice the peach halves lengthwise into 8 wedges each. Arrange the peach wedges into two martini glasses or small dessert dishes.
2 Add the ricotta cheese.
3 In a small saucepan over medium heat, add the raspberry fruit spread. Simmer while stirring until the fruit spread is liquefied, about 2 minutes.
4 Immediately drizzle the warm raspberry syrup over the ricotta, and serve. (Optional garnish: edible flowers or fresh thyme leaves)
