A latte may sound like a cheat day drink, but this pretty pink tea latte featuring Numi Tea’s Nspire Chocolate Silk Pu-erh feels indulgent without the guilt. Beetroot, the secret ingredient to this Insta-worthy beverage, provides anti-inflammatory and antioxidant-rich properties, and oat milk provides natural fiber and iron while staying low in calories and fat.   • 3/4 cup Water, tap, well
  • 1/2 Beets, Baby Red, Steamed and Peeled
  • 1 1/2 cups Oat Milk
  • 1/2 tsp Tahini
  • 2 cups Tea, black, brewed, prepared with tap water


1 Steep the Chocolate Silk Pu-erh sachets in 3/4 cup boiling water for 15 minutes, covered. Remove and discard the tea sachets. This will result in a tea concentrate – the base for your pink latte.
2 Puree the beetroot with 3/4 cup oat milk and strain through a fine-mesh sieve. You won't need the beetroot pulp for this recipe, but you can set it aside (store it in the fridge) to add to your oatmeal or morning smoothie.
3 Combine the beetroot and milk liquid mixture with the tea concentrate. Add 1/2 teaspoon tahini and blend with an immersion blender until smooth and frothy. Pour into a serving cup and top with remaining 3/4 cup oat milk, foamed.
4 Sweeten to taste, if necessary. Enjoy!
