Pistachio-Chia Dark Chocolate Balls

The dates and pistachios add mildly sweet and nutty notes to these chocolatey snacks, while the chia seeds add texture and loads of omega-3 fatty acids. We’re also tossing cacao nibs, which can help fight cardiovascular disease, into the mix.



  • 20 , pitted date
  • 2 cups Shelled Pistachios
  • 2 tbsp Coconut Oil
  • 1/2 tsp Vanilla Powder
  • 1 tbsp Chia Seed
  • 3 tbsp creamy peanut butter (without salt)
  • 1/4 cup Cacao Nibs
  • 1/4 tsp Sea Salt


1 Combine all of the ingredients minus the cacao nibs into a food processor or blender and pulse until well combined.
2 Use a spatula to recombine any of the mixture on the sides.
3 Test the mixture to see if it rolls into a ball. If it doesn’t, add either more peanut butter or coconut oil and pulse until well combined.
4 Spoon mixture into a bowl and add the cacao nibs. Stir until mixed throughout.
5 Roll mixture into balls about 2/3 -inch thick.
6 If you’d like to add more texture, scatter 2 more tablespoons of cacao nibs in a sheet pan and roll all sides of each ball in them.
