This festive goat cheese boule makes a great hostess gift or portion a little bit out for yourself throughout the week. The healthy twist to this holiday ball? Firm tofu which provides plant-based protein and good for your gut, fiber-rich dried figs.
INGREDIENTS

6 oz soft goat cheese

4 oz Cheese, neufchatel

4 oz Dried Figs

4 kernels raw pistachios

1 tsp Rosemary, fresh

6 oz Tofu, Firm
DIRECTIONS

In a large bowl, with gloved or clean hands, combine goat cheese, Neufchatel, and tofu until well blended.

Fold in the figs and rosemary to evenly distribute. Season with salt and pepper to taste.

Shape into a round boule and wrap in plastic wrap. Refrigerate for at least 1 hour to help firm shape.

Place pistachios in a large bowl, and gently rotate boule to cover in pistachios, applying light pressure as needed.

Place on a cheeseboard with a spreading knife and your favorite accompaniments such as almond crackers, sun-dried tomatoes, olives, fresh pears and honeycomb.
