Lean and mild, pork tenderloin is a perfect base for a sweet and savory sauce made from dried apricots and orange juice.
INGREDIENTS

2 lb Pork Loin

2 tsp Salt

2 tsp Ground Black Pepper

1/2 cup Plain Flour

1 1/2 tbsp Olive Oil, Extra Light

1 onion
-
4 Raw Clove
-
2 cups Orange Juice, Raw

3 cups Dried Apricots
-
1 tbsp Rosemary, Fresh
DIRECTIONS

Start by rolling pork loin in flour seasoned with salt and pepper.

Shake off the excess flour and sear over medium-high heat in 1 1/2 tablespoons of olive oil until it's golden brown on all sides. Remove the pork loin and place it inside the slow cooker.

Cook onion and garlic cloves in a hot pan until they are softened and add them to the slow cooker.

Deglaze the pan with fresh orange juice, then add the juice to the slow cooker. Add dried apricots, rosemary and 1/4 teaspoon of red pepper flakes (optional).

Cover and cook on low for 4 to 6 hours, or until the inside of the pork registers 140 F. Serve over brown rice or quinoa.
