Pork Tenderloin with Apricots

Lean and mild, pork tenderloin is a perfect base for a sweet and savory sauce made from dried apricots and orange juice.

INGREDIENTS

SERVES 8

  • 2 lb Pork Loin
  • 2 tsp Salt
  • 2 tsp Ground Black Pepper
  • 1/2 cup Plain Flour
  • 1 1/2 tbsp Olive Oil
  • 1 onion
  • 4 Raw Clove
  • 2 cups Orange Juice, Raw
  • 3 cups Dried Apricots
  • 1 tbsp Rosemary, Fresh

DIRECTIONS

1 Start by rolling pork loin in flour seasoned with salt and pepper.
2 Shake off the excess flour and sear over medium-high heat in 1 1/2 tablespoons of olive oil until it?s golden brown on all sides. Remove the pork loin and place it inside the slow cooker.
3 Cook onion and garlic cloves in a hot pan until they are softened and add them to the slow cooker.
4 Deglaze the pan with fresh orange juice, then add the juice to the slow cooker. Add dried apricots, rosemary and 1/4 teaspoon of red pepper flakes (optional).
5 Cover and cook on low for 4 to 6 hours, or until the inside of the pork registers 140?F. Serve over brown rice or quinoa.
