Pork Tenderloin with Sweet Potatoes and Bok Choy

Pork is eaten more than any other meat globally, according to a report published in the journal Nutrients in 2014.

INGREDIENTS

SERVES 4

  • 16 oz pork tenderloin
  • 1 tbsp extra-virgin olive oil
  • 1 dash salt and pepper
  • 2 garlic clove
  • 8 baby bok choy

DIRECTIONS

1 Pre-heat your oven to 425 and coat an ovenproof skillet with oil.
2 Rub pork with olive oil, salt, pepper and garlic. Sear tenderloin over medium-high heat turning until it's brown on all sides.
3 Next, roast the tenderloin for ~15 minutes until the internal temperature reads 145ºF.
4 While the tenderloin is roasting, fill a sauce pan with about 1 inch of water and place a steamer basket in the pan. Add the bok choy and cook on medium heat and steam for 3 to 5 minutes, until tender-crisp.
5 TIP: You can season the bok choy with an asian dipping sauce or spices.
