Portobello Mushroom and White Bean Salad

This hearty combination of mushrooms, quinoa, white beans and vegetables provides complete protein and lots of fiber.

INGREDIENTS

SERVES 1

  • 2 cap portobello mushroom
  • 2 tsp extra-virgin olive oil
  • 1/2 cup cooked quinoa
  • 1/3 cup canned white beans
  • 2 cups baby spinach
  • 1/2 cup cherry tomatoes
  • 1/4 medium red onion
  • 1 tsp balsamic vinegar

DIRECTIONS

1 Sauté mushroom slices with olive oil, drain, and place in a bowl.
2 Add remaining ingredients to bowl.
3 Toss with vinegar.
