This healthy take on the classic quesadilla is an easy and satisfying way to start your morning.

INGREDIENTS

SERVES 1

  • 1 egg(s)
  • 2 egg white(s)
  • 1 whole-wheat tortillas (8-inch)
  • 1/4 cup shredded Monterey jack cheese
  • 1 tbsp salsa

DIRECTIONS

1 Combine eggs and lightly beat.
2 Using a cooking spray, scramble eggs in non-stick pan until cooked to liking.
3 Place eggs on top of tortilla.
4 Sprinkle with cheese, top with salsa and roll tortilla.
