Mushrooms and peppers in combination with the eggs and cottage cheese provides fiber and protein to keep you feeling fuller longer.

INGREDIENTS

SERVES 1

  • 1/4 cup sliced mushrooms
  • 1/4 red bell pepper
  • 2 tsp extra-virgin olive oil
  • 2 egg white(s)
  • 1 egg(s)
  • 1/2 cup low-fat cottage cheese

DIRECTIONS

1 Saut? mushrooms and peppers with olive oil.
2 Combine eggs and beat lightly.
3 Using a cooking spray, cook eggs in a non-stick pan.
4 Add cottage cheese, mushrooms and peppers in the center of omelet.
5 Cook until eggs are set and fold over.
