Pulled Pork Tacos with Pickled Onions

Here, lean pork is flavorfully prepared with onion, garlic, oregano, ground coriander and pomegranate juice until extra tender. To balance tastes, the tacos are topped with avocado, pickled onions, cilantro and salsa verde.



  • 1/4 cup red onion
  • 1 garlic clove
  • 2 tsp Fresh Oregano
  • 3/4 tsp Sea Salt
  • 3/4 tsp Black Pepper, Ground
  • 1/2 tsp Ground Coriander
  • 5 oz Pork, fresh, loin, top loin (chops), boneless, separable lean and fat, raw
  • 1/2 cup 100% Pomegranate Juice
  • 4 6 Inch Corn Tortilla
  • 1/2 Hass Avocados
  • 1/2 cup Pickled Onions
  • 1/4 cup Fresh Cilantro Leaves
  • 1/4 cup salsa verde


1 Preheat the oven to 275°F.
2 In a small bowl, stir together the onion, garlic, oregano, salt, pepper, and coriander. Place the pork into a non-reactive baking dish, add the pomegranate juice, and spread onion mixture on top of the pork. Cover with a lid (or seal the dish with foil). Roast until extra tender, about 2 hours 15 minutes. Shred the pork with two forks. Stir shredded pork with 2 tablespoons of the pan juices. Reserve the remaining pan juices.
3 Warm or lightly grill the corn tortillas (or whole grain tortillas of choice) before filling, if desired.
4 Top each tortilla with the carnitas-like pork, avocado, pickled onions, and cilantro leaves. Serve with the salsa verde (tomatillo salsa) and reserved pan juices on the side.
