This tasty pumpkin protein smoothie comes in at 18 g of protein – a significant serving filled with muscle-friendly nutrients. The recipe is fully vegan and provides all of the yummy benefits of pumpkin, from sharp eyesight to weight loss properties. Nutmeg and allspice give this smoothie a seasonal feel.

INGREDIENTS

SERVES 1

  • 1 scoop Protein Powder, raw vegan
  • 1 cup Cashew Milk
  • 1/2 cup Pumpkin Puree Organic
  • 1/2 medium banana
  • 1 tsp cinnamon
  • 1/4 tsp Turmeric
  • 1/4 tsp Nutmeg (Ground)
  • 1/4 tsp Allspice, Ground
  • 1/4 tsp ground ginger
  • 1/8 tsp Kosher Salt
  • 1/8 tsp Black Pepper

DIRECTIONS

1 Whisk milk, sugar and cornstarch in a large saucepan; bring to a boil.
2 Boil three minutes, whisking constantly.
3 Beat eggs with a whisk in a large bowl.
4 Gradually add half the hot milk mixture to the beaten eggs. Return milk-egg mixture to pan.
5 Cook over medium heat three minutes, or until thick, whisking constantly.
6 Remove from heat; stir in pumpkin, salt, and pumpkin-pie spice.
7 Spoon evenly into six (6-ounce) custard cups. Let cool, and chill for about 30 minutes, or until pudding is set.
