Pumpkin Spice Muffin

This scrumptious pumpkin spice muffin can be made in the microwave in just two minutes. While decadent, the power ingredients in this muffin will make you feel better about catering to that sweet tooth. Pumpkin is a powerhouse of benefits – from improving vision to aiding weight loss – and the flaxseed meal adds heart-friendly omega-3 fatty acids to this seasonal dessert.

INGREDIENTS

SERVES 1

  • 1 large whole egg
  • 1/3 cup Pumpkin Puree Organic
  • 3 tbsp Whole Ground Flaxseed Meal
  • 1 1/2 tsp Honey
  • 1 tsp coconut oil
  • 1/2 tsp Spices, pumpkin pie spice

DIRECTIONS

1 Break egg into large microwave-safe coffee mug. Gently beat with fork.
2 Mix in pumpkin puree, honey, coconut oil, pumpkin pie spice, and flaxseed meal.
3 Microwave on high for two minutes, but watch to make sure your muffin doesn’t rise over the top of your mug.
4 Either eat your muffin out of the mug, or flip it over on a small plate and sprinkle some extra cinnamon on top.
