Quinoa and Amaranth Supercharged Breakfast

A more luxurious breakfast option than the average oatmeal or cereal bowl, this quinoa and amaranth supercharged breakfast packs a nutritious punch. Quinoa is one of the most protein and fiber-rich foods available, and oatmeal provides antioxidants and lowers cholesterol. Top with pomegranate or cinnamon for additional flavor.

INGREDIENTS

SERVES 2

  • 2 tbsp Oatmeal
  • 1 tbsp Flax Seed, Ground, Canadian
  • 2 tbsp Quinoa
  • 2 tbsp Spices, cloves, ground
  • 1 pinch Agave Syrup

DIRECTIONS

1 Put the oatmeal and flax seeds in a glass of water, and soak overnight.
2 In the morning, mix everything in a blender until creamy.
3 Cook the quinoa and/or amaranth in twice the amount of water, at medium-high heat, for 20 minutes. Drain.
4 Put the quinoa/amaranth, oatmeal and flax seed milk, and spices in a saucepan over low heat, stirring every now and then until hot.
5 Sweeten to taste and enjoy!
6 You can make it more liquid by adding water, or thicker by adding more quinoa/amaranth.
7 OPTIONAL: Add 1 cinnamon stick
