There are plenty of reasons to add strawberries to your diet. For example, did you know that one cup of strawberries provides more vitamin C than an orange? What?s more, strawberries can help lower cholesterol and they are naturally low in sugar.

1 tsp Vegetable Oil

1 onion

2 cloves Garlic Clove

3/4 cup Quinoa

1 1/2 cups Vegetable Broth

1 tsp Ground Cumin

1/4 tsp cayenne pepper

1 cup Frozen Kernel Corn

1 tbsp salt and pepper

15 1/5 oz Black Beans

1/2 cup Cilantro

2 cups Strawberries, Whole

5 cups Baby Spinach

1/2 cup Fresh Strawberries

1 tbsp 100% Lime Juice

1 tbsp Honey

40 g Salt And Pepper
DIRECTIONS

In a medium saucepan, heat oil over medium heat. Stir in the onion and garlic, and cook until lightly browned.

Add quinoa, broth and seasonings. Bring mixture to a boil. Cover, reduce heat, and simmer for about 20 minutes or until water is absorbed.

Stir in corn and black beans and let cool or store overnight in refrigerator.

In the meantime, mix all strawberry dressing ingredients (strawberries, 1 tbsp lime juice, 1/4 tup olive oil, 1 tbsp honey, salt, pepper) in a blender. Blend for 30 seconds or until all the ingredients are well blended. Set aside in a small pitcher.

When ready to serve: Fold in California strawberries and cilantro. Serve cold over a bed of baby spinach, and drizzle strawberry dressing over plated quinoa salad.
