This salad brims with quinoa, a good source of protein, vitamin E, calcium, iron and other nutrients. The tofu-based dressing adds a hearty boost of protein to give you lasting energy.
INGREDIENTS
SERVES 4

2 cups cooked quinoa

1 cup Papaya Spears

2 fruit kiwi

1 cup Mixed Berries

2 cups mixed green salad

1 block Tofu

4 tbsp Lime Juice

1/4 cup olive oil

2 tbsp Apple Cider Vinegar

1 tsp Honey
-
1/4 tsp Salt

1/4 tsp Black Pepper
DIRECTIONS

Place the tofu, juice from the limes, olive oil, vinegar, honey, salt and pepper into a blender and blend until smooth. Set aside.

Place the quinoa and fruits into a large bowl and combine with part of the dressing.

Place salad greens onto plates.

Put half of the fruit and quinoa mixture onto each plate.
