Quinoa and Fruit Grain Salad

This salad brims with quinoa, a good source of protein, vitamin E, calcium, iron and other nutrients. The tofu-based dressing adds a hearty boost of protein to give you lasting energy.

INGREDIENTS

SERVES 4

  • 2 cups cooked quinoa
  • 1 cup Papaya Spears
  • 2 fruit kiwi
  • 1 cup Mixed Berries
  • 2 cups mixed green salad
  • 1 block Tofu
  • 4 tbsp Lime Juice
  • 1/4 cup olive oil
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Honey
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

DIRECTIONS

1 Place the tofu, juice from the limes, olive oil, vinegar, honey, salt and pepper into a blender and blend until smooth. Set aside.
2 Place the quinoa and fruits into a large bowl and combine with part of the dressing.
3 Place salad greens onto plates.
4 Put half of the fruit and quinoa mixture onto each plate.
