This pilaf gets flavor from dried cranberries, garlic, and feta cheese, and is packed with vitamins A and C.
INGREDIENTS

2 cups baby spinach

1 garlic clove

2 tsp extra-virgin olive oil

3/4 cup cooked quinoa

1/4 cup dried cranberries

2 tbsp low-fat feta cheese

1/4 lemon

1 dash salt and pepper
DIRECTIONS

Saute spinach with garlic and olive oil.

Toss with cooked quinoa.

Add cranberries, feta, and toss.

Squeeze lemon over mixture, salt and black pepper to taste.
