Quinoa & Sauteed Spinach Pilaf

This pilaf gets flavor from dried cranberries, garlic, and feta cheese, and vitamins A and C from spinach.

INGREDIENTS

SERVES 1

  • 2 cups baby spinach
  • 1 garlic clove
  • 2 tsp extra-virgin olive oil
  • 1 cup cooked quinoa
  • 1/4 cup dried cranberries
  • 3 tbsp low-fat feta cheese
  • 1/4 lemon
  • 1 dash salt and pepper

DIRECTIONS

1 Sauté spinach with garlic and olive oil.
2 Toss with cooked quinoa.
3 Add cranberries, feta, and toss.
4 Squeeze lemon over mixture, salt and black pepper to taste.
5 Can be served hot or cold.
