Quinoa Stir-Fry

Quinoa Stir-Fry

INGREDIENTS

SERVES 4

  • 1 cup dry quinoa
  • 1 tbsp extra-virgin olive oil
  • 1 oz Fresh Ginger Root
  • 1 tbsp Mild Curry Powder
  • 1/2 Jalapeno Pepper
  • 5 medium stalks Celery
  • 1 cup Onions
  • 1 cup Red Bell Peppers
  • 1 tbsp tamari sauce (gluten-free)
  • 1/2 cup Currants
  • 1/2 cup Cashew Nuts
  • 8 oz Pineapple Juice, Unsweetened
  • 5 Scallion, large

DIRECTIONS

1 Rinse dry quinoa well with water.
2 Bring 2 cups of water to a boil and add in quinoa. Cover and reduce heat to low and cook for another 15 minutes.
3 While quinoa is cooking, sauté ginger and curry in oil.
4 Add jalapeno, celery, onion, and red bell pepper, and sauté until heated through.
5 Next, toss with tamari, currants, cashews, and pineapple juice.
6 Top with scallions
7 TIP: You can top with chopped cilantro as well.
