Raw Mini Tart Crust

The base of this tart -- pecans, almonds, sunflower seeds and dates -- can be paired with different fillings like key lime, coconut cream and chocolate. They’re super easy to make and don’t require any baking. The crusts are so tasty that you might even be tempted to enjoy them without any filling.

INGREDIENTS

SERVES 12

  • 1/4 cup Chopped Pecans
  • 1/2 cup Almonds, Supreme Whole
  • 1/4 cup unsalted, dry-roasted sunflower seed kernels
  • 2 tsp Maple Syrup
  • 1 Medjool Dates
  • 1 tbsp Coconut Oil
  • 1 tbsp Coconut Flakes

DIRECTIONS

1 Add all ingredients to blender and mix on low speed until pieces begin to break up and then increase the speed to high until mixture is consistent with a thick “dough.”
2 Press mixture into bottom of muffin pan cups and place in the refrigerator for at least 45 minutes until dough hardens.

4 You can swap out the almost for 1/3 cup of almond meal.
