Raw Oat & Cacao Cookie Bites

This simple yet indulgent pudding will satisfy your chocolate cravings while keeping your waist line in check. Top with fresh berries and enjoy for breakfast or dessert.

INGREDIENTS

SERVES 12

  • 1 cup Gluten Free Whole Grain Oat Flour
  • 6 average Dates
  • 4 tbsp Butter
  • 1 tsp pure vanilla extract
  • 2 tbsp agave nectar
  • 1 tbsp unsweetened almond milk
  • 1/8 tsp Sea Salt
  • 1/2 cup Gluten Free Old Fashioned Rolled Oats
  • 1 tbsp Cacao Nibs

DIRECTIONS

1 Combine the oat flour, chopped medjool dates, butter and vanilla in a food processor until the mixture resembles wet sand. Add in agave nectar and 1 tablespoon of the almond milk and salt and pulse a few times until combined.
2 Add gluten free oats and pulse a few times (you want to keep the oats intact). Add cacao nibs and pulse just once or twice. Roll into little balls and enjoy. Can be stored for up to 3 days in an airtight container in or out of the fridge.
