Ricotta and Peach Flatbread Pizza

Though that basic definition is stretched a bit here, you can technically still consider this pizza.

INGREDIENTS

SERVES 1

  • 1/2 cup Low-fat Ricotta Cheese
  • 1 Flatbread, Healthy Grain, Whole Grain White
  • 1 Peach
  • 2 tbsp Pistachios (shelled roasted & salted)
  • 1 1/2 tsp Honey
  • 1/4 tsp sea salt
  • 1/2 tsp Thyme, Fresh

DIRECTIONS

1 Spread the ricotta cheese over the surface of the flatbread (such as pocketless pita)
2 Top with the peach slices and pistachios. Drizzle with the honey. Sprinkle with the salt (such as fleur de sel) and thyme.
3 Cut into wedges using a pizza cutter to enjoy.
