Ricotta and Pomegranate Bruschetta

INGREDIENTS

SERVES 4

  • 6 slice Whole Grain Nut Bread
  • 1 cup Low Fat Ricotta Cheese
  • 1/2 tsp Grated lemon zest
  • 1/2 cup Pomegranate Arils
  • 2 tsp Thyme, Fresh
  • 1/4 tsp sea salt

DIRECTIONS

1 Preheat the oven to 425°F. Place the bread slices onto a large baking sheet. Bake until lightly toasted, about 8 minutes.
2 In a small bowl, stir together the ricotta and lemon zest. Top each piece of toast with the ricotta mixture.
3 Sprinkle with the pomegranate arils, thyme and (if using) fleur de sel.
4 TIP: Salt is optional.
