INGREDIENTS

SERVES 1

  • 6 deli sliced roast beef
  • 1/4 cup roasted red bell pepper
  • 6 leaf fresh basil leaves
  • 1 oz fresh part-skim mozzarella cheese
  • 1/2 carrot(s)
  • 1/2 cucumber(s)
  • 6 string beans

DIRECTIONS

1 Place one piece of red pepper, one basil leaf, and one piece of cheese on each slice of roast beef.
2 Roll up each slice of beef tightly.
3 Serve with carrot, cucumber, and string bean crudit?.
