Pork tenderloin is a simple and satisfying source of protein. Serve with veggies or a salad.

INGREDIENTS

SERVES 1

  • 5 oz pork tenderloin
  • 1 dash salt and pepper

DIRECTIONS

1 Preheat oven to 450F. Season the pork to taste with salt and black pepper.
2 Heat an ovenproof skillet over medium-high heat.
3 Using cooking spray, add the pork and sear until all sides are brown, turning occasionally, about 5 to 7 minutes.
4 Transfer the pan to the oven and roast until cooked through, about 15 minutes.
5 Slice the pork into medallions.
