When you do opt for red meat, choose a lean cut, such as beef eye of round for less saturated fat and fewer calories.

24 oz Beef Eye Round Steak (choice Cab)

2 tbsp Extra Virgin Olive Oil

1 tsp sea salt

1 tsp Pepper, Black

1 tsp Rosemary, Dried

2 cloves Garlic Clove

10 Baby Red Potatoes

1 tbsp extra-virgin olive oil

1 dash salt and pepper

Preheat oven to 375.

In a bowl, combine olive oil, salt, pepper, rosemary and garlic. Rub evenly over the roast.

Place roast on sheet pan.

Next, toss together potatoes, oil, salt and pepper. Spread around the roast in a single layer.

Cook meat and potatoes in oven for about 1 hour. Check center of meat with a thermometer for desired doneness.

TIP: Serve with steamed broccoli or any vegetable of your choice.
