Roasted Beet Hummus

This hummus features all the staples of the classic Middle Eastern dip with an added twist: beets! This secret superfood is a fantastic source of nitrites, which are good for your circulation and can even lower blood pressure. They also contain lots of beneficial B vitamins and antioxidants.

INGREDIENTS

SERVES 6

  • 1/2 cup raw beets
  • 10 clove garlic
  • 1 Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, drained solids
  • 1/2 cup LEMON Juice, Fresh Squeezed
  • 4 tbsp Olive Oil, Extra Virgin
  • 2 tbsp Tahini Sauce
  • 1/4 cup Water, tap, well
  • 1/2 tsp Sea Salt
  • 1/2 tsp Ground Black Pepper

DIRECTIONS

1 Preheat oven to 375 degrees Fahrenheit.
2 Cut the stem off the beet and peel the outer skin with peeler. Wash and dry it with paper towel.
3 Cut the beet into cubes to speed up cook time.
4 Place it in foil, drizzle with 1 tbsp. olive oil and fold foil closed.
5 Cut the top off the garlic bulb, place it in foil, drizzle with 1/2 tbsp olive oil and fold the foil closed.
6 Bake the garlic in the oven for 15 minutes. Bake the beet for 35-40 minutes or until softened.
7 In a food processor, squeeze out the roasted garlic cloves and add the remaining cooking oil. Add the beet with the remaining cooking oil, chickpeas, 4 tbsp. olive oil, tahini, lemon juice, water, salt and pepper.
8 Blend until smooth.
