Paleo-friendly holiday dish, sure to please.

INGREDIENTS

SERVES 6

  • 2 lb Beets
  • 1/4 cup red wine vinegar
  • 3 tbsp olive oil
  • 1 tsp fresh rosemary
  • 1 pinch salt and pepper

DIRECTIONS

1 Preheat oven to 450 degrees.
2 Combine beets with vinegar, oil, rosemary, salt, and pepper on a rimmed baking sheet. Roast, tossing once, until the vegetables are tender, 30 to 35 minutes.
